Pan-fried Chicken Escalopes

Serves 4

This dish looks good if you’re trying to impress, but it is very easy!

Serve with potato wedges and a salad, or with vegatables

Ingredients

 

4 chicken breast fillets, marinated

1 garlic close, crushed

75g butter or margarine

1 tbsp oil

Method

 

  1. Flatten the chicken fillets by placing them on a chopping board, cover them with cling film or grease proof paper and beat firmly with something flat and heavy (e.g. a meat tenderiser or heavy bottle)
  2. Heat the butter and oil gently in a frying pan (the oil helps stop the butter from burning)
  3. Cut the garlic into small pieces and add them to the pan
  4. Add the chicken breasts and cook on each side on a low / medium heat for 5 minutes
