Gravy

Serves 4

This is for the times that your food is ‘dry’ and you don’t have any meat juices to call on. This can also be used as a sauce that can be used to cook your chosen meat in.

Here is an alternative gravy recipe for those occasions where you do have meat juices.

Ingredients

 

1 small onion, finely chopped

¼ red pepper, chopped into small pieces

¼ green pepper, chopped into small pieces

1 garlic clove, crushed

1 tbsp oil

1 chicken stock cube (for chicken or port) or beef stock cube (for lamb and beef)

1 tsp dried mixed herbs

1 tsp cornflour

280ml (½ pint) of boiling water

Method

  1. Fry the onions, garlic, and peppers together in the oil in a small frying pan or small saucepan for about 5 minutes
  2. Add the boiling water, herbs and seasoning and crumble the stock cube into the mixture
  3. Simmer for 10 minutes on a very low heat
  4. Mix the cornflour with a little COLD water to make a paste and add to the pan
  5. Stir immediately and simmer for 2 minutes
  6. Then stir and serve
