One meal pasta sauce

Serves 1-2

This recipe can be used for pasta or you can brown any meat and use this as a tomato cook-in sauce.

If you do not have passata take a tin of chopped tomatoes and blend it briefly or just mash it up a little bit more.

Ingredients

 

1 carton tomato passata

1 medium onion, chopped finely

1 garlic clove, pressed or crushed

1 tbsp tomato purée

1 tsp sugar

½ glass red wine (optional)

1 tsp dried basil

1 tbsp olive oil

1 tsp salt

Any vegetables you want to add (e.g. peas, carrots, peppers, etc)

Sprinkling of parmesan cheese (optional)

Water if needed

Method

  1. Fry the garlic and onions in the olive oil for about 5 minutes
  2. Add the extra vegetables at this stage if you are using them
  3. Add the basil
  4. Pour in the passata and add the tomato purée, sugar and salt
  5. Simmer on a very low heat for at least 20 minutes
  6. Taste and add more sugar, salt or water if needed. Stir well
  7. Cook for a further 5 minutes and mix your pasta into the sauce
  8. Serve on to a plate and sprinkle on the parmesan if using it
