Basic Pasta Sauce

Enough for 15 individual meals

Not only does this recipe make sufficient sauce for 15 individual meals, it can also be used as a basis for other sauces and dishes. It will keep for up to 5 days. Store the unused sauce in the fridge and make sure that you bring it to the boil when reheating it.

 

Ingredients

 

3 small onions, finely chopped

1-2 frozen lamb chops or a small pack lamb fillet cut into largish chunks [optional]

3 tbsp olive oil

2 tbsp dried or freshly chopped basil

2 tubes tomato purée

3 400g cans chopped tomatoes

4 tsp salt

5 tbsp sugar

200 ml red wine [optional]

3 cans water (use the ones the chopped tomatoes came in)

Method

  1. Add the olive oil to a large pan and gently fry the onions, basil and meat
  2. Once the onions have softened, add the chopped tomatoes, tomato purée and wine
  3. Add the 3 cans of water and bring the pan to a boil
  4. Add the salt and sugar
  5. Allow to simmer on a low heat, stirring regularly
  6. The right taste is not reached until the sauce has been cooking for at least 30 minutes
  7. After then, taste and add more water, salt and sugar as needed
  8. Continue to simmer for at least another 30 minutes or more (the longer the better). Remember to keep stirring it at regular intervals.
