Barbeque sauce

Enough for a family sized BBQ

Not only does this make a great accompanyment to BBQ meats when poured over them, it also makes a great base to use for cooking Chicken or Pork dishes in. The sauce will keep for up to 3 days in the fridge.

It really pays to allow the sauce to simmer for longer than the 30 minutes mentioned below. Just be sure to top up the water if needed, otherwise the sauce will thicken up too much.

Ingredients

 

2 onions, chopped
1 green pepper, chopped
2 chillies, chopped
3 mushrooms, chopped (optional)
2 cloves garlic, crushed
400g can chopped tomatoes
1 tbsp lemon juice (or 4 tbsp wine vinegar)
2 tbsp Worcestershire sauce
2 tbsp soy sauce
2 tbsp sugar
1 tsp ground ginger
1 tsp English mustard
2 tsp barbecue seasoning
1 tsp everyday seasoning
2 tbsp brown sauce
1 tbsp tomato puree
4 tbsp tomato ketchup
1-2 cans water (same one that tomatoes came in)
½ tsp ground black pepper
1 tsp paprika

Method

  1. Fry the onions, garlic, peppers, mushrooms & chillies until the onions are soft
  2. Add the remaining ingredients and bring to boil
  3. Turn down, cover and simmer for at least ½ an hour (the longer the better), add more water as necessary
