Oven Cooked Pork in Sauce

Serves 4-5

Serve with rice and a salad.

Ingredients

 

4 pork loin steaks

2 small onions, chopped

2 chillies, chopped

3 mushrooms, sliced

½ red pepper, chopped

½ green pepper, chopped

250 ml chicken stock

1 tbsp olive oil

2 tsp corn flour

Method

  1. Trim the excess fat from the loin steaks and cut them into sizeable chunks
  2. Marinade well beforehand (see Marinade for Pork Steaks)
  3. Sieve the marinated pork, keeping the marinade for later
  4. In an oven proof dish, fry the meat, onions, mushrooms, peppers and chillies in the olive oil until the pork is browned
  5. Add the chicken stock and the rest of marinade
  6. Bring to a boil and transfer to the oven at 160C
  7. Cook for about 45 minutes
  8. Thicken the sauce by mixing the corn flour with a little water to make a paste and quickly add it to the dish
