Eve's Pudding (Mum Style)

Serves 4-5

You can reduce the amount of sugar added when making the stewed apples if you don't have a sweet tooth.

Ingredients

 

For the stewed apples:

3 Large cooking apples

75g of sugar

 

For the topping:

100g soft margarine

75g caster sugar

2 eggs

125g self raising flour, sifted

Method

  1. Peel and core the cooking apples and cut into small pieces
  2. Place in a large micowavable dish with the sugar
  3. Cook on high for about 8 mins, stir and apples should breakdown and look like mashed up apples. This is stewed apple! Leave to cool until cold
  4. Make the topping by creaming together the margarine and the caster sugar with an electric hand mixer.
  5. When the mixture is soft and fluffy, add the eggs one at a time and mixing well before you add the second egg
  6. Add the flour gradually, mixing gently with a large metal spoon
  7. Grease a fairly large ovenproof dish with margarine and put the apple mixture in the bottom of it.
  8. Slowly spoon on the cake mixture making sure that all of the apple is covered with the mixture
  9. Cook in a moderate oven at 150C (Gas Mark 4) for about 40 minutes
  10. When ready, it should be golden brown and when you put a knife blade into the centre of the pudding it should come out without any cake mixture attached (there may be apple, but that’s ok)
  11. Serve with hot custard
