Babs's BBQ Pork Ribs

Serves 4

This is a nice treat for when you just want a spicy snack, and you don’t need to have a barby as it’s done in the oven. However, if you are having a barby they can be done on the barby too!!

Note: You must line your tin or it will take forever to clean after cooking. The marinade has a high sugar content that will stick and burn. Just throw the foil away after use, leaving your tin clean and undamaged.

Ingredients

 

2 packs Pork ribs (or 2 racks of ribs)

142 ml tomato ketchup

3 tbsp tomato purée

1 tbsp sugar

1 tbsp honey

3 tbsp brown sauce

2 garlic cloves, crushed

2 tsp dark soy sauce

1 tbsp lemon juice or vinegar

1 tsp black pepper

2 tbsp barbecue seasoning

1 tbsp oil

Method

 

  1. Cut the racks into individual ribs if they haven’t been done
  2. Place them in a large saucepan with enough cold water to just cover the ribs
  3. Boil ribs in an open pan for about 5 minutes. Scoop off any scum that rises to the top with a spoon and discard
  4. Pour the water off and leave to cool until the ribs are cold or nearly cold
  5. Mix all the marinade ingredients together with 4 tablespoons of cold water
  6. Coat the ribs in the marinade - this is best done by putting the ribs in a large plastic container with a lid, pouring the marinade over them and shaking the container well. If you don’t have such a container just coat them with a brush or spoon
  7. Leave to marinate for at least 1 hour
  8. Line a large baking tin with foil and place the ribs in there
  9. Preheat the oven at 220C (Gas Mark 7)
  10. Cook for about 30 mins, turning occasionally,
  11. Leave the ribs to stand for about 5 mins before eating
